Egyptian Bread - Aish Baladi

Like pita but made with whole wheat flour, this Egyptian flatbread is traditionally baked in blazing-hot ovens. The word AISH means life, which shows how important bread is to Egyptians’ diets.

We start our list with the bread because it will be our companion when trying all the coming Egyptian breakfasts.

 

2- Ful (fava beans)

It is most common traditional breakfast, it’s a staple in every Egyptian’s diet. Slow-cooked fava beans come in many flavors and seasonings – olive oil, seeds oil, butter, ghee.

3- Taamya (falafel)

Egyptian falafel is made from smashed ful mixed with parsley, coriander, and dill, which makes it green and far different from the chickpea falafel. It is also served in various sizes and shapes.

 

4- Eggs

Egyptians have many ways of serving Eggs. Many of them are shared around the Mediterranean, but they have a delicious Egyptian twist here.

Eggs with pastrami (aged dried meat)

Eggah – baked eggs in the over like the Italian frittata

Shakshuka – mixed eggs and tomatoes & onions

Rolled boiled eggs – the regular boiled eggs but get fried in Ghee

 

5- Egyptian Cheese

Egyptian dairy products are served for breakfast in many ways.

White feta cheese mixed with tomato

Mish – made by fermenting salty cheese for several months or years.

Rumi cheese is famous for its aromatic and intense flavor. It is either grilled on bread or deeply fried.

6- Aubergine / Eggplant

Served in many Egyptian & Mediterranean ways:

Deeply fried in oil and seasoned with spices & garlic.

musakah: cooked in the oven with other vegetables with or without minced meat

 

7- Salads & Dippings

All of the above will be mostly enjoyed with fresh salads and dipping sauces, such as green salad, pickled vegetables and tomatoes, onions, tahini sauce, baba ghanoug, and loads of fresh watercress, which will help you digest this heavy breakfast.
